Proteins in food and consumer products must be investigated for their allergenic potential before introduction into the marketplace. Existing guidelines misclassify many normal proteins as allergens. Our new method (AllerCatPro), co-developed with P&G, replaces linear sequence windows with 3D surface epitope similarity and allows to assess allergenicity potential of proteins with 37-fold increase in specificity at 100% sensitivity. We are interested in further research in allergy prevalence and potency prediction.
