I graduated from the National University of Singapore with a 1st Class Honours in Bachelor in Applied Science (Food Science and Technology). My final year project involves the analysis of the nutrients and non-nutrients content in fruits and vegetables after subjecting them to different processing methods and determine how this impact the serving size required for consumption. This project furthers increased my interest in the interaction between the field of food science and food nutrition. As a Research Officer in the Clinical Nutrition Research Centre I hope to be able to explore deeper the links between food structure, food nutrition, health and disease, with the ultimate goal of enhancing each individuals’ well-being.
