Dr. James Chan, Platform Lead, and Ms. Geraldine Oh, Research Officer, both from Bioactives and Human Health, shared their research work at the 8th International Conference on Food Digestion in Porto. 🍽️🔬

Dr. James was on stage to demonstrate how gut microbial metabolism influences the bioavailability and pharmacokinetics of stevioside, a natural sweetener. Their findings reveal that it's not just about increasing bioaccessibility; factors like intestinal permeability play a crucial role in how substances are absorbed in our bodies.

Meanwhile, Ms. Oh’s poster presentation delved into how different cooking and processing methods of seaweed impact protein digestibility and the gut microbiome. Using the SHIME® system, their research demonstrated that cooking methods introduce varying levels of digestibility and fermentation by the gut microbiome, which is also dependent on the metabolic capacity of our individual gut microbiome.
