In the foreword, Dr. Tan reflected on the milestones and challenges that shaped the alternative protein industry in 2024. She highlighted the pivotal role of the Asia Pacific (APAC) region as a testbed for innovation, driven by advancements in regulatory frameworks, glocalised consumer strategies, and cutting-edge R&D.

Key insights include:
✔️The importance of consumer-centric innovation to tackle acceptance challenges in diverse APAC markets.
✔️Leveraging regional ingredients and minimal processing to optimise nutrition and affordability.
✔️The role of collaboration between public and private sectors to address key challenges in the alternative protein industry and advancing taste, texture, and nutritional profiles through research.

One such partnerships is with the Monell Chemical Senses Center,  which integrates sensory and consumer research to translate fundamental science into real-world product innovation. Our scientists have also successfully developed plant-based prototypes such as siew mai and gyoza, showcasing the potential of glocalised approaches to food innovation.
