Innovating for a Sustainable Future: Prof. Thomas Brück’s Seminar Recap:
We recently hosted Prof. Thomas Brück, head of the Werner Siemens-Chair for Synthetic Biotechnology at Technische Universität München, in SIFBI where he shared insights on sustainable biotechnological processes for food applications.

Key Takeaways include the use of Cutaneotrichosporon oleaginosus yeast to transform agrifood waste into valuable lipids as a substitute for traditional vegetable oil, with up to 75% oil accumulation. He and his team have developed a technology to use agrifood waste as alternative feedstock for producing yeast oil. His technology promises high yields without the use of solvents. He also shared a case study demonstrating how yeast oil, made from surplus bread, can be used as a substitute for palm oil in baking due to its similar physical properties which can be a sustainable and eco-friendly option moving forward. This seminar provided a deep dive into the potential of microbial oil processes.
