    ❓What distinguishes a development chef from a traditional chef❓
    Consider this: Development chefs blend culinary creativity with a deep understanding of food science and market trends, crafting dishes that align with contemporary consumer demands. In contrast, traditional chefs excel in the art of cooking, mastering sophisticated techniques and ingredients to thrive in the dynamic, high-pressure environments of kitchens. Enjoyable food not only satisfies immediate sensory desires but also supports long-term health and contentment, demonstrating a vital link between culinary enjoyment and overall well-being.

    Excited to host the founder of The Development Kitchen (TDK), Dale Bowie based in Wellington, New Zealand, at our recent seminar. Dale, a pioneer in the culinary field, shared his revolutionary approach to food development that blends the artistic flair of molecular gastronomy with a robust, data-driven methodology. Dale and his team have worked closely with scientists from SIFBI on an SG-NZ Seaweed Project to improve seaweed digestibility in both upper gut and colon, as part of our in vitro SHIME digestion study and AgResearch in various aspects from flavour, sensory, fermentation, processing, complemented with analytical expertise in proteomics and peptidomics to characterize the molecular changes resulting from cooking methods.
